Done. Finished. Completed. And over it. Yes. There were a series of moments in the past week that involved tears when I didn’t think I would ever be done. But I just turned in my final assignment for statistics and I did the 30 second happy dance!
Now I can get back to my regular life. Thank goodness. And as promised here is my heavenly whipped topping recipe. of And no, I am not one of the very talented people who take awesome photos of food. Maybe someday I will be?
I love, love making this. I have been making a batch once a week and having it on top of everything from fresh fruit to cupcakes. And yes. I am a little obsessed.
What you will need:
1 14oz can of coconut cream
1 8oz package of cream cheese (softened)
A scoop of sour cream
About a teaspoon of vanilla (not pictured)
And a bit of honey or sugar, sweeten to taste, but you do not need much.
What you do:
Put all ingredients in a mixing bowl and either with a hand or standing mixer and mix together until smooth. Note. It does feel like it takes forever, but it does get smooth.
